Why Do You Want to Use the Twinax cables?
Why do you want to use the Twinax cables? What advantage do you see over just using base-T GigE ports on the switch for stacking? Three observations:
1. The SFP ports on these switches are really intended for optical. Optical does have some advantages - it can go longer distances, it can safely penetrate ground planes, etc.
2. Since the SFP ports on these switches are GigE (not 10GigE) there is no speed advantage for you using Twinax.
3. Twinax cables are bloody expensive.
Absolutely see the advantage of Twinax for runs between switches at 10Gbe - Twinax is lots cheaper than optical for short runs, especially at 10Gbe - but for switches that only do GigE all you are doing is paying 10x the price for the same performance as you'd get with cat 5 between the switches.

Other than that, you shouldn't have a problem. They should work fine. Silly to do it, but they will work.
